Overview
Longtime fans of Defined, please help us welcome back Highland Co-op!
Sourced from the high hills of Huehuetenango, Guatemala, comes this delicious regional blend from four legendary producers: Erick Perez, Antonio Martinez, Jorge Martinez, and Viviano Pablo. High altitudes, rich limestone soils, hot sunny days, and cool nights come together to create the perfect microclimate for producing exceptional coffees.
Erick Perez
Erick and his father Adiel work alongside each other in processing their coffees. Erick has been pushing his family to focus more and more on using best practices during processing of cherries to increase cup quality. They process their coffee at the wet mill located across the street from the family farm where they grow Caturra and Bourbon parcels.
Antonio & Jorge Martinez
Antonio is the son of Jorge. These two also work together in producing and processing. Although Antonio is relatively new to the specialty market, he’s already committed to quality and exploration away from traditional methods. Some of his practices include using terracing, soil testing, and fertilizer experimentation. This season in particular, he did a lot of amending soil inputs to raise his cup quality. He and his father share processing and drying infrastructure, and he oversees processing for his father's coffees as well.
Viviano Pablo
Viviano is a member of the ASODIETT cooperative near Huehuetenango. His farm is located in the township of Los Chales, just outside of Tuiboch. He grows Pache Verde, caturra, catimor, and Anacafe 14 varieties at around 1600 MASL. Viviano has been in the coffee game since just 15 years old! He first inherited a plot from his father, and then saved to purchase another. On his farm, he also grows citrus, mango, and chalúm trees, which act as shade for the coffee plants.
Smallholder Specialty
This blend represents the commitment we have to smallholder farms, who might not have traditionally been able to access the specialty coffee market. Our importing partner, Shared Source, has done an excellent job in creating this delicious regional blend. They purchased this coffee from the above producers directly, in parchment, and secured the dry milling process themselves before preparing the coffee for export.
